Foie Gras (pronounced fwa-gwa) is literally French for “fat liver” of ducks and geese, which were especially fattened by feeding them corn. The result is liver meat that is rich and buttery. Yum!

As for “degustation”, it's just a fancy French way of saying “sampling”. Speaking of, we did mention four courses of Foie Gras to sample, so let's get to it.

  • First up (brace yourself for this dish's name), we have the Marbled Terrine de Foie Gras, Unagi, Teriyaki sauce, Lemon Confit and Red Cabbage Salad.
  • Then we have the Duck Liver Raviolis cooked in chicken Bouillon, Cream of Mushroom and Truffle Cappucino.
  • Follow that up with Mini Duck Liver Hamburger.
  • For dessert, there's the Chantilly of Duck Liver , chocolat and Coffee Pistachio.
